Unrestored ones that I have seen have always been chemically blackened. Other finishes that you might see, such as polished brass, nickel plate or black painted are most likely the result of enthusiastic restoration.
For an easy blackening at home, try using "Gun Blue", obtainable from any gun shop, or Jenkins Black Antiquing Fluid BS2, obtainable online from Rest Express. Gun Blue, as the name suggests, ends up a as very dark blue/grey.
