Just my luck, I’ve stripped the clutch pedal pinch bolt, would any of you wonderful people be able to tell me what size it is please?

Pretty sure it's 5/16 bsf although I can't go and check.
If you check the quality/damage in the lever with an old head stud or similar,i.e. If it screws in easily you may or may not need to put a tap through it.

Open workshop door, check clutch pedal lying on the bench: 5/16” BSF.
