We very regularly have to play around with chassis to body packing and as Ruairidh has said, "Packing" is the operative word. I doubt that even when new, Austin bodies were anything more than an approximate fit on the chassis. For us, everything is dictated by door and bonnet fit; we pack and tighten down as required to get a perfect fit. There is no "correct" thickness.

Thank you Martin. I have a better idea of what I need to do as a starting point. I'm trying to start with a level platform to bolt the floor pan to before I start doing the wood framing.

Now I see! We usually build off a rigid, flat table and only worry about mating the body to the chassis at a fairly advanced stage.

I love those curved flanges, a tricky job, very well executed.

Martin, the table in the pic is not what I am using to build the floor unit. We have a proper one for that.  The floor was just placed on the table in the pic for the photos.

In case people are interested this is a John Heath body kit. The metal work is very well made.
